On German Christmas markets and fun fairs, you can find these tasty, aromatic crullers everywhere! They are called Schmalzkuchen, Schmalzgebäck or Mutzen, depending on the region you’re at. What did I miss them! Their fragrance! And the warmth of the bag on the hands on a cold day on a Christams market in winter.

Getting afraid as a child, that once you ate too many, you might feel ill on one of the carousels later. But you just could not stop eating…

At Christmas markets and fun fairs, these sweet, little doughnuts are unfortunately not vegan. The dough contains eggs and sometimes they are even fried in lard.
With my recipe you can easily make them at home, 100% cruelty free!

If you haven’t tasted them yet, you should really give them a try!

Ingredients for 6 portions of crullers:

500 g flour
20 g of fresh yeast
250 ml (1 cup + 1 tbsp) soy milk
2 tbsp gram flour (or soy flour), stirred with 6 tbsp water
80 g of sugar
50 g vegan butter, soft
1/2 tbsp of vanilla sugar
1 tbsp of lemon zest (organic), grated
1/4 tsp of salt

1 l of oil

Icing sugar

Preparation:

Heat up the soymilk, until it is lukewarm but not hot. Crumble the yeast into a bowl and add 50 ml of the lukewarm milk and 1 tbsp of the sugar. Add 2-3 tablespoons of flour and mix well. Let it rest for about 10 minutes.
Mix the remaining ingredients in a large bowl, add the yeast and knead thoroughly. The dough should no longer stick to your fingers. If it does, add a little more flour. Let it rest for another 30 minutes.
Roll out the dough, about 1 cm thick (finger thick) and cut into into little squares, about 2 cm each.

Heat about one liter of oil in a saucepan over medium heat. Fry the dough pieces in little portions, turning them 1-2 times in the oil. Then drain the small donuts on kitchen paper. And generously sprinkle them with icing sugar.
If possible, eat the crullers right away, when they are still warm!

Tip:

If you have any left overs, you can reheat the crullers in the oven at 200°C (400F). Then it will be soft and fluffy again. Not quite as good as very fresh, but still very tasty.
